10 Minute Fish Tacos. Mexican tacos for the win! With these filled with crispy fish, you'll love these flavoursome bites of heaven.

Serves: 2 (easily doubled) Time: 10 minutes

Ingredients

  • 4 x Small Tortillas

  • 2 x 150g white fish fillets

  • 2 Limes, juiced

  • 1.5 Teaspoons Ground Cumin

  • 2 Tablespoons Olive Oil

  • 1/2 Cucumber, diced

  • 1 Red Chilli, deseeded and finely chopped

  • Bunch Coriander, leaves picked

  • 3 Spring Onions, finely sliced

  • 250g Cherry Tomatoes, halved

  • 1 Avocado

  • Extra salad if you like

Method

  1. In a bowl combine the fish with juice of 1 lime, cumin and 1 tablespoon olive oil. Allow to marinate for 15 minutes, if you have time.

  2. Next, make a salsa by combining the cucumber, chilli, coriander, spring onions, cherry tomatoes, half a tablespoon of olive oil and juice of half a lime.

  3. Heat a non-stick frying pan over high heat. Add the fish and cook for 2-3 minutes each side or until just cooked.

  4. Meanwhile, halve the avocado and remove the seed. Scrape out flesh into a small food processor. Add remaining half tablespoon olive oil and juice of half a lime and blend to combine. Alternatively, mash the avocado with a fork.

  5. Remove fish from pan, flake with a fork. Warm the tortillas if you like! Spread with the guacamole, top with flaked fish and salsa. Serve immediately with extra salad if you like.
