Flatbread Pizza

10 Minute Flatbread Pizza. Honestly so easy to make and the flavours just go so well, it will be your new obsession!

Serves: 4 Time: 10 minutes



  • 280g Cherry Tomatoes

  • 2 Lemons, zested and juiced

  • 4 Flatbreads

  • 1 Handful Basil, shredded (optional)

  • 12 Olives (optional)

  • 1 Red Onion, sliced into thin wedges

  • 2 Tablespoons Olive Oil

  • 600g Chickpeas, drained

  • 2 Garlic Cloves, crushed

  • 2 Tablespoons Tahini (optional)

  • You can use shop bought hummus if you want to


  1. Heat the grill to high. Add the onion wedges to an oven proof tray, drizzle 1 tablespoon on top, season and grill for 5 mins.

  2. Halfway through add the tomatoes and grill until they pop.

  3. In a large non-stick pan, add remaining oil, chickpeas and garlic. Cook for around 5 mins then mash everything up with a potato masher. Next add the tahini, lemon zest and a splash of water.

  4. Pop the flatbreads under the grill for a few minutes then when ready, top with the mashed chickpeas, fresh tomato, onion, olives and basil. Add a sprinkle of cheese if you're exercising.
