6 minute breakfast packed with protein, perfect for breakfast or lunch in a rush!
Serves: 1 Time: 6 minutes
Ingredients
1 large tomato, peeled and chopped into cubes
1 tsp olive oil
2 eggs
80g tinned tuna, drained
Pinch of oregano
Pinch of chilli flakes
Parsley, chopped to serve
Method
Heat the oil in a small pan, throw in the chopped tomatoes and fry over high heat for 3 mins.
Create 2 gaps in the tomato and break the eggs into them, season well.
Arrange pieces of tuna on top, then sprinkle over the spices.
Fry for a further 3 minutes until the eggs sets and cooked to your liking. Serve with the fresh parsley, yum!
