Garlic Mushroom Gnocchi

15 Minute Garlic Mushroom Gnocchi. Super quick to make, so filling and perfect for mushrooms lovers!

Serves: 2 Time: 15 minutes


 

Ingredients

  • 50g Pine Nuts

  • 350g Gnocchi

  • 50g Rocket

  • 40g Cheddar Cheese, grated

  • 5g Sage Leaves, chopped finely

  • 1 Tablespoon White Wine Vinegar

  • 3 Garlic Cloves, minced

  • 240g Chestnut Mushrooms

  • 50g Butter

Method

  1. Heat the oven to 200°C and boil the kettle.

  2. Pop the pine nuts onto a baking tray and roast them for 4 mins, until golden.

  3. Heat the butter in a large non-stick pan over a high heat. Add mushrooms and saute for 5 mins.

  4. Meanwhile, put the gnocchi in the pan of salted, boiling water and cook according to the package instructions. Once ready, save about 200mls of water for later, and drain the remaining.

  5. Next, combine vinegar with 2 tablespoons of olive oil and some seasoning. Set aside.

  6. Finally, add the sage and garlic, cooking for 1 min more then add the gnocchi, mix well and serve immediately.
