20 Minute Garlic Naan + Spiced Paneer. Spicy cheesy vegetarian Indian dish on the table in 20 mins.
Serves: 4 Time: 20 minutes
Fresh Ingredients
1 Small Garlic Naan per person
450g Paneer, cut into cubes
Small Bunch Coriander, chopped
Other Ingredients
140g Green Lentils
2 Veg Stock Cubes, dissolved in 1L
boiling water
2 Onions, grated
1 Thumb Sized Piece Ginger, grated
1 Red Chilli, sliced (optional)
1 Teaspoon Turmeric
2 Teaspoons Garam Masala
2 Tablespoons Veg Oil
Method
Heat a large based pot then add the lentils, stock, onion, ginger, chilli, turmeric and garam masala.
Cover and cook for 20 mins, until the lentils are cooked through and tender. You may need to increase the heat at the end to boil off any excess liquid.
Toss the paneer in the oil and if you like you can use a little extra of the dried spices on top for extra flavour.
Heat a large non-stick frying pan over medium heat. Then add the paneer, cooking evenly on all sides.
Serve the cooked lentils on a plate with the paneer on top and a sprinkle of coriander to finish! Dunk in your garlic naan and enjoy.
