10 Minute Ginger + Sesame Noodles. Tastes so fresh and healthy, on the table in 10 minutes - perfect weeknight dinner!

Serves: 4 Time: 10 minutes
Ingredients
Ingredients
225g Rice Noodles
1 Teaspoon Sesame Oil
1 Red Pepper, thinly sliced
2 Carrots, grated
1 Handful Snow Peas
1⁄4 Red Cabbage, sliced
1 Can Chickpeas, drained
1 Bunch Coriander, chopped
Throw in any extra veggies that you need using up
Sauce
80ml Water
80ml Soy Sauce
60ml Maple Syrup/Honey
60ml Toasted Sesame Oil
1 Clove Garlic, grated
1.5 Teaspoons Ginger, grated
1.5 Teaspoons Cornflour
1 Teaspoon Toasted Sesame Seeds
Method
Heat a large wok over high heat.
Add 1 tablespoon of sesame oil and add all the vegetables. Cook until starting to soften, around 5 mins.
In a small bowl, mix the sauce ingredients together until well combined.
Next add the noodles to the pan, along with the sauce and chickpeas.
Mix well and heat through until the sauce has thickened.
Garnish with coriander and enjoy!
