Ginger + Soy Mushrooms

10 Minute Ginger + Soy Mushrooms. Super quick on the table and great for date night!

Serves: 2 Time: 10 minutes


Fresh Ingredients

  • 50g Butter

  • 6 Portobello Mushrooms

  • 6 Spring Onions, sliced

  • 1 Red Chilli, finely chopped (optional)

Other Ingredients

  • 1 Thumb Sized Piece Ginger, grated

  • 3 Tablespoons Soy Sauce

  • 1/2 Teaspoon Sugar

  • 1 Pack of Microwaveable Basmati Rice

  • 2 Teaspoons Sesame Oil (optional)


  1. Heat the butter in a large non-stick pan. Add the mushrooms whole and sauté for 3 minutes, flipping them halfway.

  2. Next add the soy, chilli, sugar, ginger and half of the spring onions. Cook evenly and ensure the sauce is evenly distributed over the mushrooms.

  3. Meanwhile cook the rice according to the package instructions, once done transfer to a bowl, add the remaining spring onions and sesame oil.

  4. Toss well and divide between plates.

  5. Top the rice with the mushrooms and any sauce drizzled on top!
