Gnocchi Ragu

25 Minute Gnocchi Ragu. So easy to make and super quick for all the family. Can be made with beef mince or Quorn.

Serves: 4 Time: 25 minutes



  • 800g Can Chopped Tomatoes

  • 2 Red Onions, diced

  • 90g Meat-Free Mince

  • Broccoli, cut into small florets

  • 1 Teaspoon Dried Oregano

  • 2 Garlic Cloves, minced

  • 4 Vegetable Stock Cubes, dissolved in 400ml of boiling water

  • 2 Tablespoons Balsamic Vinegar

  • 400g Gnocchi

  • Olive Oil


  1. Heat the oven to 220°C. Then add the veggie mince to the stock and allow it to sit until later on.

  2. Take out 2 baking trays. Pop the broccoli onto one tray and the gnocchi on another. Drizzle 1 tablespoon of water and 1 tablespoon of olive oil over each tray and season well. Then bake in the oven for 20 mins.

  3. Meanwhile, heat a large non-stick pan with 2 tablespoons of oil. When hot add the onion and cook for around 8 mins on low heat, until translucent. Then add the garlic and cook for another minute.

  4. Next, add the veggie mince to the onion and fry on high heat for 3 minutes. Then add the tomatoes and bring everything to a boil. Reduce the heat and simmer for around 10 minutes until the sauce has thickened.

  5. Add the vinegar and oregano to the pan, season and mix well.

  6. Serve the ragu in bowls with the gnocchi and broccoli on top.
