Golden Halloumi Salad

10 Minute Golden Halloumi Salad. Great for lunch and dinner, I mean halloumi - need I say more?

Serves: 2 Time: 10 minutes


 

Fresh Ingredients

  • 1 Tablespoon Mint, chopped finely

  • 225g Halloumi, sliced lengthways

  • 1 Lemon, cut in half and juiced

  • 1 Egg, beaten

  • Side salad if you like

Other Ingredients

  • 1 Teaspoon Smoked Paprika

  • 120g Couscous or 100g rice dry weight

  • 2 Tablespoons Mayonnaise

  • 30g Flour

  • 30g Panko Breadcrumbs

Method

  1. Prepare 3 bowls. Put the flour in the first. Put the beaten egg in the second, and the panko breadcrumbs and paprika in the third.

  2. Begin to dip the halloumi in the flour, then egg mixture, and finally in the breadcrumbs. Making sure it's coated well, then pop onto a plate.

  3. Cook the couscous according to the package instructions.

  4. Heat 2 tablespoons of veg oil in a large non-stick pan over high heat. Fry the halloumi until nice and golden on both sides, around 2 mins per side. Once done, transfer to the kitchen roll and set aside.

  5. Meanwhile, mix the juice of the lemon, mayonnaise and mint together and set aside.

  6. Serve the halloumi on top of the couscous with the yummy dressing!
