Granola Bars

Granola Bars. Makes 20 bars. Enjoy for breakfast on the go with 1 serving of fruit from the fruit list. Perfect for an energy boost before or after our Workouts.

Serves: 20

  • 250g natural peanut or almond butter

  • 250g honey

  • 480g granola (try choose one with mostly green on the nutritional label)

  • 240g rolled oats

  • 130g dark chocolate chips (divided into 2)

  • Optional dried fruit

  1. Line a rectangular baking dish with baking paper or foil and rub with a little olive oil, then set aside.

  2. In a large mixing bowl, beat together the peanut butter and honey, then stir in the granola and oats.

  3. Once combined, stir in half of the chocolate chips.

  4. Spread the mixture evenly into the prepared baking dish. Sprinkle with remaining chocolate chips.

  5. Place another sheet of baking paper over the mixture and press firmly down, making sure the top is smooth and the mixture is as compact as the baking dish allows.

  6. Place the dish in the fridge for about 30 minutes (not any longer), then you can cut into 20 bars.

  7. Store in sealed container for up to 2 weeks.

  8. If you prefer them warm, you can also bake in the oven for 10-12 minutes on 175°C.
