15 Minute Greek Chicken Pasta Salad. A twist on the fave greek salad, with extra protein and perfect for lunch or dinner!
Serves: 4 Time: 15 minutes
Ingredients
150g Small Pasta, dry (penne, farfalle, fusilli, macaroni etc)
2 Chicken breasts, sliced lengthways into 4 steaks (1 tbsp soy sauce and garlic needed)
80g Feta, cubed or crumbled
300g Cherry Tomatoes, sliced
1 Cucumber, sliced
Bag of Rocket or lettuce of your choice
1 Red onion, sliced very thin
Dressing:
60ml Olive Oil
½ Lemon, juiced
2 Tablespoons Red Wine Vinegar
½ Teaspoon Dijon Mustard
½Teaspoon Honey
1 Teaspoon Garlic, minced
Method
Cook pasta according to the packet instructions. Meanwhile, combine all dressing ingredients in a small bowl. Season and mix well.
Season your chicken breasts and mix with a dash of soy sauce and garlic, then fry in a pan 3-4 mins each side till no longer pink in the middle.
Once the pasta is done, drain and return to the pan. Add all the remaining ingredients, the dressing and give everything a good mix. Place your chicken on top.
Serve immediately and store any leftovers in the fridge to enjoy cold the next day!
