Greek Pittas

5 Minute Greek Pitta Wraps. I do love a pitta wrap - perfect for lunch at home or on the go, so many flavours!

Serves: 2 Time: 5 minutes
Ingredients
Half a red onion
1 small cucumber
100g cherry tomatoes
50g feta, crumbled
2 pitas
Handful spinach
2 tablespoon hummus (to spread)
Half a lemon, juiced
Half a tablespoon oregano, fresh or use 1 teaspoon dried oregano
Pinch salt
Half a teaspoon red chilli flakes
Half a tablespoon olive oil
Half a tablespoon balsamic vinegar
Method
If preparing for lunch later, you should firstly toast the pittas and leave to cool.
Then chop the cucumber, tomatoes, onion and feta and put into a bowl together with the spinach.
In a separate bowl, squeeze in the lemon, olive oil and vinegar. Mix together and then add the oregano, pepper and salt. Mix well and pour over the salad.
Take your pittas and spread the hummus inside, fill with your greek salad then wrap tightly in tin foil read for lunch. Enjoy!
