Greek Salad

5 Minute Greek Salad! Oh my days, you can't beat a greek salad, and this one is delish!



Serves: 1 (easily doubled) Time: 5 minutes

 

Ingredients

  • 1/2 baby romaine lettuce head, chopped

  • 50g cherry tomatoes, halved

  • 1/4 red bell pepper, diced

  • 1/4 green bell pepper, diced

  • 1/2 cucumber, diced

  • 1/8 red onion, thinly sliced

  • 28g pitted Kalamata olives

  • 40g feta cheese, crumbled (check it's not cow's milk if on detox)

  • salt & pepper, to taste

  • DRESSING - 1 tsp olive oil, 1/2 lemon juiced, 1/4 tsp dried oregano

Method

  1. In a large bowl, mix together all the dressing ingredients together and season with salt and pepper.

  2. Add the lettuce, tomatoes, bell peppers, cucumber, onion and olives and toss to combine.

  3. Transfer salad to a serving bowl and top with crumbled feta cheese.

  4. This recipe can easily be doubled up for you and your family/partner. I also like to take this to work with me in a mason jar if you have one..
