Greek Stuffed Peppers

20 Minute Greek Stuffed Peppers. Perfect for summer, enjoy!

Serves: 2 Time: 20 minutes


 

Ingredients

  • 2 Red Bell Peppers

  • 250g Microwavable Rice, flavoured would be great (Merchant Gourmet)

  • 1 Tablespoon Pesto

  • 1 Handful Pitted Black Olives, chopped

  • 100g Feta Cheese, sliced

Method

  1. Cut the top off the peppers and scoop out the inside. Pop them onto a plate and into the microwave for 6 mins. Until softened.

  2. Meanwhile, combine the rice, pesto, olives and some of the feta cheese. Mix well. Cover with cling film and heat in the microwave until fully cooked.

  3. Once the mixture is ready, fill each pepper, top with the rest of the feta cheese and pop them under the grill to crisp up for 10 more mins!

  4. Serve and enjoy with a big green salad if you like.
