Halloumi Fritters

10 Minute Halloumi Fritters. Perfect meal-prep bowl for lunches on the go. For me personally, Sunday is Meal Prep Day! I prep my lunches for 3 days choosing a meal prep bowl, then have an easy wrap or leftovers for Thursday-Friday. Set yourself up for a great week of staying on track and get meal prepping these gorgeous bowls.

Serves: 4 Time: 10 minutes


 

Ingredients

Fresh Ingredients

  • 2 courgettes, grated

  • 150g halloumi, grated

  • 2 large eggs, beaten

  • 2 spring onions, finely sliced

  • handful coriander, roughly chopped

Feta Salad Ingredients

  • bag of salad

  • 60g feta, crumbled

  • half a cucumber, sliced

  • 4 sundried tomatoes, sliced

  • 1 yellow or red bell pepper, chopped

  • drizzle of balsamic vinegar

Other Ingredients

  • 1/2 teaspoon ground white pepper

  • 2 tablespoons sesame seeds (toasted)

  • 30g self-raising flour

  • 20g cornflour

  • 2cm vegetable oil in pan for frying

Method

  1. In a sieve, throw in the courgettes, then use a clean tea towel to squeeze out the liquid – you want them as dry as possible.

  2. Next, in a bowl mix together both flours, sesame seeds and pepper. Then throw in the coriander, halloumi and courgette, and toss lightly to combine.

  3. Add the beaten eggs and spring onions to the same bowl and stir until you have a thick batter.

  4. Heat the oil in a large pan over medium heat. Once nice and hot, add a heaped tablespoon of the mixture and pat firmly down in the oil with a spatula to make an individual fritter. You may need to do this in batches to make 8 fritters. When one side is brown, flip them and cook for a further few minutes browning both sides. Approx 3-5 mins on each side. Blot the fritters on kitchen roll to absorb any grease before serving.

  5. Serve with a feta salad (just combine ingredients above) and a sprinkle of salt on top! Can be eaten hot or cold.

  6. You can make these in batches and freeze before cooking.
