15 Minute Halloumi Giga + Greek Tomato Salad. Perfect for summer, enjoy!
Serves: 4 Time: 15 minutes
Fresh Ingredients
200g Halloumi, cut into 3cm cubes
1 Red Pepper, cut into squares
1 Green Pepper, cut into squares
1 Red Onion, cut into squares
Marinade Ingredients
2 Tablespoons Lemon Juice
2 Tablespoons Olive OIl
2 Teaspoons Oregano
1 Teaspoon Ground Cumin
1 Teaspoons Smoked Paprika
1 Garlic Clove, minced
1/2 Teaspoon Salt
1/2 Teaspoon Cayenne Pepper (optional)
Salad Ingredients
3 Tablespoons Red Wine Vinegar
1 Tablespoon Olive Oil
1 Garlic Clove, minced
1/2 Teaspoon Oregano
1 Red Onion, thinly sliced
4 Large Tomatoes, cut wedges
8 Olives, halved
1 Tablespoon Feta, crumbled
Method
Mix all the marinade ingredients in a bowl and add the halloumi. Marinate for an hour or so, overnight would be perfect - but no worries - just as long as possible.
Thread the cubes of halloumi onto skewers with the peppers and onion. Grill on a barbecue or under a hot grill for 6–10 minutes, turning until cooked through.
Meanwhile prepare your greek salad with all ingredients. serve everything together and enjoy!
