Ham & Mushroom Frittata

10 Minute Ham & Mushroom Frittata. So easy to make and perfect for a weekend brunch packed full of protein!

Serves: 1 Time: 10 minutes



  • ½ teaspoon olive oil

  • 40g chestnut mushrooms, sliced

  • 25g ham, diced

  • 40g bag of spinach

  • 2 medium eggs, beaten

  • 1 tablespoon grated cheddar or vegan alternative


  1. Heat the grill to its highest setting. Heat the oil in an ovenproof frying pan over a medium-high heat. Tip in the mushrooms and fry for 2 minutes until softened. Stir in the ham and spinach and cook for 1 minute more until the spinach has wilted. Season well with black pepper.

  2. Reduce the heat and pour over the eggs. Cook undisturbed for 3 minutes until the eggs are mostly set. Sprinkle over the cheese and put under the grill for 2 minutes. Serve hot or cold.

  3. Veggie option - just cook without the ham or replace with meat alternative.
