High Protein Salmon & Egg Bake

So easy to make and fills you right up, serve for lunch or breakfast!

Serves: 4 Time: 50 minutes


Ingredients

  • 280g salmon fillets, seasoned with salt & pepper

  • 2 tsp olive oil

  • 5 eggs

  • 2 egg whites

  • 120ml milk

  • 2 large cloves garlic, minced

  • 200g asparagus, chopped

  • 1 tsp oregano and 1 tsp thyme

  • 1 red onion, cut into wedges

  • 1 red bell pepper, sliced thin


Method

  1. Heat the oven to 220°C, then heat a teaspoon of oil in a pan, on high heat. Whack in the salmon fillets skin side up and fry for 2 minutes. Then place on a baking tray and cook for another 8 mins. Once done, set aside.

  2. Meanwhile, add the remaining teaspoon of oil to the same pan and cook the garlic and asparagus on medium heat for 5 mins. Season with the oregano and thyme and mix well.

  3. Next, whisk the eggs, egg whites, and milk together with a pinch of salt and pepper.

  4. Flake the salmon into a baking dish, throw in the pepper, onion, asparagus and the egg mixture.

  5. Finally, reduce the oven to 180°C bake for 30-35 mins until the eggs set are brown. Serve with salad if you like and enjoy!
