3 Tablespoons Olive Oil
1 Teaspoon Dried Oregano
200g Pack Smoked Bacon, chopped
1 x 400g Cans Chopped Tomatoes
20 Basil Leaves
250g Pack Fresh Egg Lasagne
Green Salad of your choice
For the Cheese Sauce
400ml Milk
35g Butter
35g Plain Flour
1⁄2 Teaspoon Fresh Nutmeg, grated (optional)
50g Parmesan, grated
Method
Heat the oven to 190°C. Then, heat 1 tablespoon of olive oil in a non-stick pan over medium heat. Saute the onions until translucent, add bacon and and saute for 5 mins more.
Next add the tomatoes, season well and simmer for around 5 minutes. Once ready, remove from the heat and tear the basil into the sauce, mix well.
For the cheese sauce, pour the milk into the pan and add the butter and flour. Mix well until the flour has combined fully and the sauce begins to thicken. Add the cheese, mix well followed by the nutmeg and seasoning.
Start spooning around a third of the tomato sauce on the bottom of a lasagne dish. Next top with one layer of the lasagne sheets. Continue to do this until your sauce and lasagne sheets have run out. Pour over the cheese sauce and scatter a little extra cheese and nutmeg on top.
Finally bake for around 30 mins until nice and golden. Serve with a fresh green salad and enjoy.
