30 Minute Honey Mustard Roast Pork. Served with crispy potatoes and greens, this dinner is ideal for a Sunday or when you just need some home comfort food.
Serves: 4 Time: 30 minutes
Ingredients
500g Baby Potatoes, cut into quarters.
2 Tablespoons Olive Oil
600g Pork Tenderloin
1 Tablespoon Honey
1 Tablespoon Dijon Mustard
1 Tablespoon Wholegrain Mustard
2 Garlic Cloves, minced
500g Green Beans or other steamed greens or salad
Optional Fresh Thyme
Method
Heat the oven to 220°C. Add one tablespoon of oil to a large deep frying pan over medium heat.
When the oil starts to smoke, add the potatoes. Season and fry for 5 mins.
Meanwhile, ensure the pork is dry by patting with some kitchen roll.
In a bowl combine the rest of the oil with the honey, both mustards and garlic. Cover the pork in half of the mustard mixture and save the rest for later.
Create space in the potato pan and add the pork, searing the pork evenly, browning all edges.
Now cover the pork in the remaining sauce and optional fresh thyme and transfer to a roasting dish with the potatoes and whack into the heated oven to roast.
Roast for around 20 minutes, making sure the pork is fully cooked through and no pink colour remains. Meanwhile steam your chosen greens or prepare a salad.
Slice your pork and serve everything together and enjoy!
