10 Minute Hulk Gnocchi. Packed with greens, this super speedy pasta dish hits all the right spots.

Serves: 2 (easily doubled) Time: 10 minutes
Ingredients
350g Gnocchi
20g Basil, chopped roughly
80g Green Beans, chopped
1 Garlic Clove, minced
50g Rocket
50ml Olive Oil
35g Grated Parmesan
1 Tablespoon Red Wine Vinegar
20g Pine Nuts
Method
Heat a wide base non-stick pan over medium heat. Throw in the pine nuts and toast them. Watch them closely so they don’t burn, then set aside.
Now add the basil, garlic, 3/4 of pine nuts, 3/4 grated parmesan cheese to a food processor and blitz to a fine crumb then add 3 tablespoons olive oil and blitz until smooth. Season and set aside.
Next add the green beans to a pot of boiling water over a high heat and cook for 2 mins, add the gnocchi to the same pan and cook for a further 3 mins until the gnocchi begins to rise to the top. Once done, drain, and save 200ml of the starchy water in a jug for later.
Meanwhile, make a dressing with the vinegar, 2 tablespoons of olive oil and a pinch of seasoning. Toss well with the rocket and set aside.
Next pop the gnocchi back into the pan along with the green beans and the pine nuts mixture and a splash of starchy cooking water, mix well on a low heat for 1 min.
Serve the gnocchi with your crisp rocket side salad and the remaining pine nuts and cheese on top!
