Hulk Gnocchi

10 Minute Hulk Gnocchi. Packed with greens, this super speedy pasta dish hits all the right spots.


Serves: 2 (easily doubled) Time: 10 minutes

 

Ingredients

  • 350g Gnocchi

  • 20g Basil, chopped roughly

  • 80g Green Beans, chopped

  • 1 Garlic Clove, minced

  • 50g Rocket

  • 50ml Olive Oil

  • 35g Grated Parmesan

  • 1 Tablespoon Red Wine Vinegar

  • 20g Pine Nuts


Method

  1. Heat a wide base non-stick pan over medium heat. Throw in the pine nuts and toast them. Watch them closely so they don’t burn, then set aside.

  2. Now add the basil, garlic, 3/4 of pine nuts, 3/4 grated parmesan cheese to a food processor and blitz to a fine crumb then add 3 tablespoons olive oil and blitz until smooth. Season and set aside.

  3. Next add the green beans to a pot of boiling water over a high heat and cook for 2 mins, add the gnocchi to the same pan and cook for a further 3 mins until the gnocchi begins to rise to the top. Once done, drain, and save 200ml of the starchy water in a jug for later.

  4. Meanwhile, make a dressing with the vinegar, 2 tablespoons of olive oil and a pinch of seasoning. Toss well with the rocket and set aside.

  5. Next pop the gnocchi back into the pan along with the green beans and the pine nuts mixture and a splash of starchy cooking water, mix well on a low heat for 1 min.

  6. Serve the gnocchi with your crisp rocket side salad and the remaining pine nuts and cheese on top!
