10 Minute I'm Fine Fajitas. Great for lunch too, love this dish and so easy to make!
Serves: 4 Time: 10 minutes
Fresh Ingredients
1 Avocado, sliced
2 Tablespoons Soured Cream
2 Red Peppers, cut into strips
1 Small Bunch Coriander, finely chopped (optional)
4 Large Flour Tortillas
1 Lime, 1⁄2 juiced and the other half cut into wedges
Cupboard Ingredients
400g Black Beans, drained
1 Tablespoon Olive Oil
1 Red Onion, sliced thinly
2 Garlic Cloves, minced
1/2 Teaspoon Chilli Powder
1/2 Teaspoon Smoked Paprika
1/2 Teaspoon Ground Cumin
Method
Heat the oil in a large non-stick frying pan and saute the pepper and onion until soft and starting to brown. Add garlic and cook for 1 min more, followed by the spices and stir.
Next add the lime juice and season to taste. Remove from the heat and transfer to a dish and keep warm.
Add the black beans into the same pan, allowing them to warm through, then stir through the coriander.
Heat the tortillas in the microwave. Once nice and warm, build your fajitas with the pepper and onions, black beans, sliced avocado and sour cream on top!
