Italian Steak + Potato Salad

15 Minute Italian Steak + Potato Salad. This dish is delish, so fresh and simple to make. Winning!

Serves: 2 Time: 15 minutes



  • 1⁄2 Red Onion, halved and sliced thinly

  • 180g Cherry Tomatoes. halved

  • 1 Garlic Clove, minced

  • 200g Baby Potatoes, halved

  • 2 Tablespoons Apple Cider Vinegar or White Wine Vinegar

  • 2 Tablespoons Olive Oil

  • 2 Tablespoons Red or Green Pesto

  • 2 x 150g Beef Steaks, seasoned

  • 80g Green Beans

  • 1 Handful Flat-Leaf Parsley


  1. Boil the potatoes in a pan of salted water for around 10 minutes, until tender.

  2. Meanwhile, add the onions to the vinegar in a small bowl and set aside.

  3. Heat a large non-stick pan over medium heat, add half of the oil. When hot, fry the steaks and cook to your liking. For the final minute of cooking the steaks, spread the pesto over the steaks. Once done, remove from the pan and allow to rest.

  4. Meanwhile, add the green beans to the pan with the potatoes for the final 5 mins of cooking. Once done, drain and allow to air-dry.

  5. Once air-dried, add them to a bowl along with the parsley, the onions from the vinegar, tomatoes, garlic and the remaining oil. Season with salt and pepper and toss to combine.

  6. Serve your steaks with the yummy potato salad and any extra pesto juices from the steak pan.
