Japanese Miso Fish

Super fresh and full of flavour, serves 2 people for dinner in 15 mins.



Serves: 2 Time: 15 minutes

Ingredients

  • 225g green beans

  • 1 large shallot, thinly sliced

  • 1 small red bell pepper, thinly sliced

  • 2x 170g halibut (or other white fish) filets, skin removed

  • 2 tbsp. white miso paste

  • 2 tbsp. tamari

  • 1 tsp. fish sauce

  • 1 tbsp. sriracha sauce

  • 1 tbsp. honey

  • ½ tsp. salt, or more to taste

  • ½ tsp. white pepper

  • baking paper

  • 50g rice dry weight per person to serve, or microwave rice packet



Method

  1. Preheat the oven to 200°C. Lay 2 sheets of baking paper on a flat surface.

  2. Evenly divide the green beans, shallot, and red bell pepper between the 2 pieces of paper, placing the ingredients in the centre of the baking paper. Place the halibut filet on top.

  3. In a small bowl, whisk together the miso, tamari, fish sauce, sriracha and honey. Pour the sauce equally over the halibut filets. Season the fish with salt and the white pepper.

  4. Fold down the short ends of the paper over the fish, making a rectangle. Then, grab the open ends and roll towards the fish so that no liquids can escape, creating an enclosed package.

  5. Place the parcels on a baking tray and transfer to the hot oven. Bake for 13-15 minutes, until the fish is cooked through and flakes easily.

  6. Remove from the oven and serve immediately with your rice. Yum!
