Jerk Chicken & Rice

15 minute dish perfect for a weeknight dinner.

Serves: 4 Time: 15 minutes



For the marinade:

  • 1 tsp dried thyme

  • 1 tsp allspice

  • 2 tbsp brown sugar

  • ½ tsp salt

  • ½ tsp pepper

  • 2 tsp garlic powder

  • ½ tsp cinnamon

  • ½ tsp cayenne pepper

  • 2 tbsp olive oil

  • 2 tbsp lime juice

For the chicken and rice:

  • 450g chicken breast, diced

  • 50g rice dry weight per person

  • 1 tbsp olive oil

  • Handful coriander, chopped to garnish

  • Lime wedges to garnish


  1. Combine all the marinade ingredients together in a bowl, whack in the chicken and turn to coat in the marinade. Leave to marinate for 15 mins or overnight if possible.

  2. Cook the rice per pack instructions.

  3. Heat the 1 tbsp oil in a pan over medium-high heat, cook the chicken for 8-10 mins until browned and cooked through.

  4. Serve with the rice and extra steamed green veggies of your choice!
