Leftover Veggie Fried Rice

20 Minute Leftover Veggie Fried Rice. Super quick on the table and packed with veggies.

Serves: 2 Time: 20 minutes


 

Ingredients

  • 2 Tablespoons Soy Sauce

  • 2 Teaspoons Vinegar

  • 2 Teaspoons Olive Oil

  • 1 Teaspoon Honey

  • 2 Eggs

  • 2 Tablespoons Sesame Oil (if you have it)

  • 1 Onion

  • 300g Random Veggies

  • 1 Pack Microwavable Rice

Method

  1. Combine the top 4 ingredients in a bowl, mix well.

  2. Grab any veggies you have leftover, and cut them all to similar sizes.

  3. You can get creative here and make sure you use up anything that's been leftover from previous meals. We are talking peas, potatoes, mushrooms, carrots, cabbage, peppers, aubergine. Literally anything.

  4. Heat a large non-stick pan and add the oil, this again can be any oil you have. Once hot add the egg and scramble in the pan. Once done remove and set aside.

  5. Add another tablespoon of oil into the pan on high heat then add the veg. Start with the hardest veg you have as that will need longer to cook. Gradually add all the veggies in and stir while cooking.

  6. Pour over the sauce and add the egg. Toss to combine. Finally, heat the rice according to the package instructions, then add to the veg.

  7. Give everything one last stir and it's ready to serve!
