So delish - you'll love this!
Serves: 4 Time: 20 minutes
Ingredients
450g chicken breast
100g butter
50g capers, drained
3 lemons, zested and juiced
30g fresh parsley, chopped
2 garlic cloves, minced
Steamed greens of your choice
Method
Place the chicken breasts between 2 sheets of cling film or a sandwich bag. Using a rolling pin, gently pound the chicken until it's approx 1.5cm thick. Season well.
Heat ¼ of the butter in a large pan over a medium-high heat and cook the chicken for 4 mins on each side until golden brown. Set aside.
Add the remaining butter and garlic to the pan and cook, stirring constantly for 2-3 mins until its melted and golden brown.
Throw in the capers and cook for 1 min. Then whack in the lemon juice and half the zest, and mix through.
Next throw the chicken back into this same pan, pouring in any chicken juices too. Cook for 2-3 mins until the chicken is thoroughly cooked and the sauce has thickened slightly.
Serve with your favourite steamed greens or salad and sprinkle with remaining lemon zest and parsley.
