Lemon Chicken Couscous

20 Minute Lemon Chicken Couscous. Another flavourful dish from the Middle East, enjoy!

Serves: 4 Time: 20 minutes
Ingredients
Fresh Ingredients
1 Lemon, zested and cut into wedges
600g Chicken Thighs, cut into strips
2 Courgettes, diced
50g Apricots, diced (optional)
Other Ingredients
2 Chicken Stock Cubes, dissolved in 600ml boiling water
1 Tablespoon Olive Oil
2 Onions, sliced
2 Garlic Cloves, minced
240g Couscous
1 Teaspoon Moroccan Ras-el-Hanout Spice (or use Paprika and Cumin)
2 Red Chillies, sliced (optional)
Method
Heat a large non-stick pan with 1 tablespoon of olive oil in. When hot add the Moroccan spices and cook until fragrant, then add the onion, garlic, and cook until caramelised.
Add the chicken, apricots and courgette, mix well and after 3 mins add the stock. Mix well then add 4 lemon quarters. Cover and continue to cook for 15 minutes, until chicken is thoroughly cooked.
Meanwhile, add 400ml boiling water to the couscous, add the lemon zest and cover for 8 mins. Once done, fluff up the couscous and divide between plates.
When the chicken is done, take out the lemons, bash them to get the pulp and juice into the pan and then discard the rind.
Serve your couscous with the lemon chicken on top. Yum!
