25 Minute Love Thai Bowl. Perfect meal-prep bowl for lunches on the go. For me personally, Sunday is Meal Prep Day! I prep my lunches for 3 days choosing a meal prep bowl, then have an easy wrap or leftovers for Thursday-Friday. Set yourself up for a great week of staying on track and get meal prepping these gorgeous bowls.

Serves: 4 Time: 25 minutes
Ingredients
2 Packs of Microwavable Rice
Turkey Mixture
1 Teaspoon Sesame Oil
1 Red Onion, chopped
2 Garlic Cloves, chopped
1⁄2 Teaspoon Chilli Powder
1 Teaspoon Ginger, minced
450g Turkey Mince
3 Tablespoon Soy Sauce
3 Limes, juiced
Veggies
2 Teaspoons Olive Oil
1 Onion, diced
2 Red Peppers, sliced
1 Pack of Green Beans
1 Bag of Spinach
Options
Easily halved if you are a single person
Can be rolled into a wrap for lunch if you prefer, eaten hot or cold.
Sauce Ingredients
4 Tablespoons Soy Sauce
1 Teaspoon Chilli Paste (optional)
1 Teaspoon Fresh Ginger
1⁄2 Tablespoon Fish Sauce
Optional Extra Toppings
1 Bunch Spring Onions, thinly sliced
1 Handful Coriander, chopped
1 Handful Mint Leaves, chopped
Method
In a medium saucepan heat the sesame oil. Add all the turkey ingredients, mix well and allow to brown off.
In a small pan, add all the sauce ingredients, bring to a gentle simmer so it reduces, then set aside. Heat a separate saucepan with the olive oil in, then add all the veggies (apart from the spinach) and cook until the veggies begin to soften. Next add the spinach, season and cook until wilted. Remove from the heat and allow it to cool.
Heat the rice according to the pack instructions. Divide between 4 bowls. Add the turkey mince, veggies and pour the sauce over the top, sprinkle with the optional extra toppings and enjoy!
