20 Minute Luscious Lentil Soup. A firm fave, you can blend to smooth or leave a bit chunky, totally up to you!
Serves: 4 Time: 20 minutes
Ingredients
2 Onions, finely chopped
2 Garlic Cloves, minced
2 Carrots, finely chopped
1 Tablespoon Freshly Grated Ginger
1 Teaspoon Turmeric
1 Teaspoon Ground Cumin
150g Red Lentils
600ml Coconut Milk, canned
1 Handful Parsley, chopped
Method
Put the oil, onion, garlic, carrot, and ginger into a deep saucepan, over medium heat. Cook until fragrant, around 2 mins. Then add the turmeric, and cumin, stirring well.
Next, add the lentils and coconut milk to the pan, along with 400mls water, (you can add more water if you think it needs it). Bring everything to boil, then reduce and simmer for 15 mins until lentils have softened slightly.
Once done, allow the soup to cool slightly before blending the soup until smooth.
Finally, return the soup to the heat, season to taste, gently warm if it needs it and stir through the parsley. Serve and enjoy!
