Marinated Mozzarella

10 Minute Marinated Mozzarella. Veggie and oozing with cheese, you will love this!

Serves: 4 Time: 10 minutes



Fresh Ingredients

  • 1 Bunch Fresh Basil, chopped finely, stalks separated

  • 250g Cherry Tomatoes, halved

  • 2 Courgettes, sliced into discs

  • 250g Mozzarella, cut into chunks

  • 200g Rocket, chopped roughly

Other Ingredients

  • 2 Tablespoons Balsamic Vinegar

  • 2 Tablespoons Veg Oil

  • 2 Packs Microwavable Basmati Rice

  • 2 Tablespoons Dijon Mustard

  • 2 Teaspoons Dried Oregano

  • 2 Tablespoons Honey


  1. Heat a large non-stick pan over high heat, add the veg oil and sauté the courgette for 5 mins.

  2. Add the tomatoes and oregano then cook for a further 4 mins. Finally add the basil stalks and mix well.

  3. In a small bowl combine the balsamic vinegar, honey, Dijon mustard, basil leaves and a pinch of salt and pepper. Add the mozzarella chunks, mix, then set aside to marinate.

  4. Meanwhile, heat the rice according to the package instructions.

  5. Once cooked, divide between bowls along with the rocket mixed into your rice. Serve the cooked veg on top of your rice with the marinated mozzarella and any extra dressing drizzled on top. Easy peasy!
