25 Minute Meat Free Burgers. Veggie burgers using Quorn mince. Yum!
Serves: 4 Time: 25 minutes
Fresh Ingredients
400g Quorn Mince
250g Cherry Tomatoes, quartered
20g Basil, chopped
Extra Salad if you like
Cupboard Ingredients
500g Potatoes, cut into chunks
2 Red Onions, diced
2 Garlic Cloves, minced
2 Tablespoons Red Wine Vinegar
4 Tablespoons Capers, chopped roughly
60g Pitted Black Olives, chopped roughly
2 Teaspoons Dried Dill (optional)
3 Tablespoons Olive Oil
1.5 Tablespoons Veg Oil
Method
Heat the oven to 220°C. Toss the potatoes in 1.5 tablespoons of oil, season then pop them in the oven to bake for 25 minutes, until crispy.
Meanwhile, add half of the onion, tomatoes, capers, basil, vinegar and 1.5 tablespoons of olive oil to a bowl. Mix well and set aside.
Then in a larger bowl, combine the remaining onions, olives, garlic, mince and dill and mix well. Then with your hands create 4 even-sized burger patties.
Next, heat a large non-stick pan with the vegetable oil over high heat when hot add the burgers and cook evenly on both sides until nicely browned and cooked through.
Finally, top the burgers with a spoonful of the tomato salsa and serve with the potatoes and any remaining salsa on the side.
