Meatball Mash

30 Minute Meatball Mash. Perfect home comfort food, can't go wrong with meatballs and mash!

Serves: 4 Time: 30 minutes
Ingredients
500g Beef Mince, low fat %
40g Breadcrumbs
1 Egg, lightly beaten
112ml Beef Broth
680g Waxy Potatoes, cubed
Salt and Pepper
338ml Chicken Broth
2 Tablespoons Butter
400g Mushrooms, sliced
1 Tablespoon Flour
1 Handful Fresh Parsley, chopped
Method
Put the potatoes in a pan of salted water and bring to a boil. Once ready, drain and set aside.
In a large bowl, combine the beef, bread crumbs, egg, beef broth, and seasoning. Mix together with your hands making sure it's well combined. Then form into meatballs. Heat a large non-stick pan over medium heat and begin to brown off the meatballs, then remove and set aside.
Meanwhile, in a large pot, melt the butter over high heat. Add mushrooms, and a pinch of seasoning, saute until the mushrooms are soft. Next sprinkle in the flour and stir to coat well.
Add 3/4 of the chicken broth and return to a boil, then reduce the heat to medium high and add the meatballs. Simmer, stirring occasionally.
Next add seasoning, parsley and the remaining broth to the potatoes and mash well.
Serve the meatballs and mushrooms on a bed of mash and enjoy!
