Mediterranean Cod with Veggies

15 Minute Mediterranean Cod with Veggies. So fresh and healthy, and on the table in 15 minutes. Winner!

Serves: 4 Time: 15 minutes



  • 1 tablespoon olive oil

  • 1 onion, chopped

  • 400g can chopped tomatoes

  • 1 teaspoon light soft brown sugar

  • Few sprigs thyme, leaves stripped

  • 1 tablespoon soy sauce

  • 4 cod fillets, or another white flaky fish, such as pollock

  • Mixture of steamed veggies, such as green beans, broccoli, kale etc


  1. Bring a pan of water to boiling.

  2. Heat 1 tablespoon olive oil in a frying pan, add 1 chopped onion, then fry for 5-8 mins until lightly browned.

  3. Stir in a 400g can chopped tomatoes, 1 heaped teaspoon light soft brown sugar, the leaves from a few sprigs of thyme and 1 tablespoon soy sauce, then bring to the boil.

  4. Simmer 5 mins, then slip 4 cod fillets into the sauce. Cover and gently cook for 8-10 mins until the cod flakes easily.

  5. Meanwhile steam your veggies ready to serve with the cooked fish. Easy peasy!
