Melted Mozzarella + Aubergine Steaks

30 Minute Melted Mozzarella + Aubergine Steaks. Oh so cheesy! Tastes amazing - I promise!

Serves: 4 Time: 30 minutes
Fresh Ingredients
2 Aubergines, sliced into 12 thick discs
250g Mozzarella Ball, cut into 12 slices
600g Potatoes, cut into wedges
Unlimited Green Salad
Cupboard Ingredients
2 Tablespoons Harissa or Chipotle Paste
2 Tablespoons Mayonnaise
2 Teaspoons Dijon Mustard
2 Tablespoons Olive Oil
2 Tablespoons Veg Oil
Method
Heat the oven to 220°C. Toss the potatoes in 2 tablespoons of olive oil and season well. Pop them on a baking tray and in the oven for 25-30 minutes, until crispy.
Next season the aubergine and coat evenly with the harissa paste. Then heat a large non-stick pan with 2 tablespoons of veg oil over medium heat. When hot add the aubergines. Cover and cook for 5 minutes, turning halfway.
Once nicely charred, remove from the heat and pop a slice of mozzarella on each disc, pop the lid back on and allow the mozzarella to melt slightly.
Meanwhile, combine the mayo and mustard in a small bowl. Mix well and set aside.
To serve, pop the aubergines onto plates, divide the wedges, salad between the plates, serve and enjoy with your dressing on the side!
