Melted Mozzarella + Aubergine Steaks

30 Minute Melted Mozzarella + Aubergine Steaks. Oh so cheesy! Tastes amazing - I promise!

Serves: 4 Time: 30 minutes


Fresh Ingredients

  • 2 Aubergines, sliced into 12 thick discs

  • 250g Mozzarella Ball, cut into 12 slices

  • 600g Potatoes, cut into wedges

  • Unlimited Green Salad

Cupboard Ingredients

  • 2 Tablespoons Harissa or Chipotle Paste

  • 2 Tablespoons Mayonnaise

  • 2 Teaspoons Dijon Mustard

  • 2 Tablespoons Olive Oil

  • 2 Tablespoons Veg Oil


  1. Heat the oven to 220°C. Toss the potatoes in 2 tablespoons of olive oil and season well. Pop them on a baking tray and in the oven for 25-30 minutes, until crispy.

  2. Next season the aubergine and coat evenly with the harissa paste. Then heat a large non-stick pan with 2 tablespoons of veg oil over medium heat. When hot add the aubergines. Cover and cook for 5 minutes, turning halfway.

  3. Once nicely charred, remove from the heat and pop a slice of mozzarella on each disc, pop the lid back on and allow the mozzarella to melt slightly.

  4. Meanwhile, combine the mayo and mustard in a small bowl. Mix well and set aside.

  5. To serve, pop the aubergines onto plates, divide the wedges, salad between the plates, serve and enjoy with your dressing on the side!
