Mermaid Salmon Kebabs

10 Minute Mermaid Salmon Kebabs. So fresh and healthy, served with rice noodles and broccoli.

Serves: 2 Time: 10 minutes


 

Fresh Ingredients

  • 120g Tenderstem Broccoli

  • 1 Lime, half juiced

  • 1 Red Pepper, cut into chunks

  • 2 Salmon Fillets, sliced into 4

Other Ingredients

  • 100g Rice Noodles

  • 1 Tablespoon Honey

  • 2 Spring Onions, sliced

  • 2 Tablespoons Tamari or use 3 Tablespoons Soy Sauce

  • 4 Teaspoons Oil

  • 4 Skewers, soak the skewers in cold water

Method

  1. Heat the oven to 200°C. Put the salmon fillets and the pepper into a large bowl. In a separate small bowl add the tamari, honey, 2 teaspoons oil, and the juice from half the lime, stir. Add half of this marinade into the large bowl with the pepper and salmon. Mix well to cover.

  2. Place one piece of salmon followed by a piece of pepper onto a skewer, and repeat until there are 2 pieces of salmon and 3 pieces of pepper on each skewer. Boil the kettle.

  3. Pop the skewers on a large baking tray (lined with foil), place them to one end. Then on the other end of the tray, throw in the broccoli and drizzle with 2 teaspoons of oil. Whack into the oven for 10 mins, until cooked through.

  4. Pour the boiling kettle water into a large saucepan until 3/4 full, add the rice noodles into the pan and leave to soften for 6-8 mins. When the noodles are cooked, drain and then add back into the saucepan, pour in the remaining marinade with sliced spring onions and the cooked broccoli. Mix well. Leave to one side.

  5. Serve the noodles and broccoli on the side with the salmon skewers and squeeze any leftover lime juice over the top.
