Mexican Lettuce Wraps

25 Minute Mexican Lettuce Wraps. I do love a healthy wrap - perfect for lunch at home with lots of flavours.

Serves: 2 Time: 25 minutes


 

Ingredients

Fresh Ingredients

  • 1 Avocado, smashed

  • 1 Lime, juiced

  • 1 Romaine Lettuce

  • 2 Tomatoes, chopped

  • 400g Carrots, cut into fries

Optional Extras

  • Handful Fresh Coriander

  • 2 Spring Onions, chopped

  • 2 Teaspoons Chipotle or Harissa

Cupboard Ingredients

  • 240g Black Beans canned, drained

  • 2 Teaspoons Oil

Method

  1. Heat the oven to 200°C

  2. Toss the carrots in 2 teaspoons of the oil and pop them on a baking tray and into the oven for 25 minutes.

  3. Next, throw the coriander, tomatoes and onions together in a bowl. Add the juice for the lime mix well.

  4. Heat the beans for a minute in the microwave, then add to the salsa. Season and mix in the chipotle or harissa paste.

  5. Divide the lettuce between plates and spoon over the bean and salsa mix and a dollop of smashed avocado.

  6. Serve with the carrot fries on the side.
