Mexican Salmon Steak

20 Minute Mexican Salmon Steak. Mexican dish - just banging!!

Serves: 2 Time: 20 minutes


 

Ingredients

  • 3 Tablespoons Olive Oil

  • 2 Salmon Fillets

  • 500g Potatoes, cut into wedges

  • 1 Courgette, chopped into slices

  • 1 Lime, zest grated and half juiced

  • 1 Handful Fresh Coriander, finely chopped

  • 1 Garlic Clove, minced

  • 1 Teaspoon Chipotle Paste

Method

  1. Heat the oven to 220°C.

  2. Throw the potatoes onto an oven-proof tray, drizzle one tablespoon of oil over them and season well. Bake in the oven for 20 minutes, until nice and golden.

  3. Meanwhile, in a small bowl, add the lime zest, juice, coriander, chipotle and garlic with 1 tablespoon of oil and mix well. Season and set aside.

  4. Add 1 tablespoon of olive oil into a non-stick pan over high heat. When nice and hot add the courgettes and cook for 2 mins either side. Remove from the pan and set aside.

  5. Next season the salmon on both sides and add to the same pan that had the courgettes in (skin side down). Cook for 4 mins either side then remove from the pan.

  6. Serve the salmon with the courgettes, wedges the yummy chipotle sauce and a wedge of lime on top!
