Moroccan Cod

Ooooff, so easy to make and perfect for a speedy weeknight dinner.



Serves: 2 Time: 25 minutes

 

Ingredients

  • 300g cod fillets

  • 1 tbsp lemon juice

  • 2 garlic cloves, crushed

  • ½ tsp turmeric powder

  • ½ tsp paprika

  • ½ tsp cumin

  • 2 tbsp olive oil

  • 100g bulgur or couscous

  • 1 tomato, chopped

  • ½ onion, chopped

  • 15 olives, halved

  • 2 sprigs parsley, chopped

  • Lemon wedges, to serve


Method

  1. Drizzle the cod with lemon juice, season with salt and pepper, then rub with the garlic and the rest of the spices and 1 tbsp olive oil. If you have time leave for 30 mins or so to marinate.

  2. Cook the bulgur in salted water, around 15 mins, once cooked, set aside.

  3. Meanwhile, whack the chopped tomatoes in a salad bowl, add the onion, olives and parsley, mix well and set aside.

  4. Heat a pan and fry the cod for 3-4 mins on each side until cooked through, then set aside.

  5. Throw the cooked bulgur into the same pan with any remaining juices, to reheat if it needs it.

  6. Serve everything together with lemon wedges on the side to squeeze over. Enjoy!
