Moroccan Tray Bake

30 Minute Moroccan Tray Bake. Packed with protein and flavour, this tray bake is so simple and easy.

Serves: 4 Time: 30 minutes



  • 400g Cherry Tomatoes

  • 140g Green Olives

  • 140g Greek Yogurt

  • 1 Small Bunch Dill, finely chopped (optional)

  • 2 Tablespoons Olive Oil

  • 2 x 400g Can Chickpeas, rinsed and drained

  • 2 Teaspoons Ground Coriander

  • 2 Teaspoons Ground Cumin

  • 1 Teaspoon Chilli Flakes

  • 2 x 250g Pouch Cooked Quinoa

  • 400g Can Apricot Halves, drained and roughly chopped


  1. Heat oven to 200°C.

  2. In a large roasting tin, toss the chickpeas with the spices and chilli flakes, then roast for 15 mins.

  3. Next add the tomatoes, apricots, olives and quinoa to the pan then, mix well then return to the oven to bake for a further 15 minutes.

  4. Meanwhile combine the yogurt, dill and some seasoning in a bowl.

  5. Once ready, divide between bowls, drizzle the yogurt on top and enjoy!
