Mushroom & Bacon Mash Pie

35 Minute Mushroom & Bacon Mash Pie. Banging autumn/winter meal, so filling!

Serves: 4 Time: 35 minutes


 

Ingredients

  • 650g Sweet Potatoes, cut into chunks

  • 2 Tablespoons Olive Oil

  • 2 Red Onions, diced

  • 500g Mushrooms, chopped

  • 70g Bacon, chopped

  • 2 Tablespoons Flour

  • 500ml Vegetable Stock

  • 250g Kale, chopped

  • 3 Teaspoons Wholegrain Mustard

  • 1 Teaspoon fresh or dried Tarragon

  • 1/2 Lemon, juiced

To Serve With

  • Steamed Green Beans & Asparagus

Method

  1. Boil the sweet potatoes for 15 mins, taking care not to overcook.

  2. Heat 1 tablespoon of oil into a deep frying pan, sauté the onions until translucent, then add the mushrooms and bacon - fry for 5 more mins.

  3. Mix in the flour and cook for 2 mins stirring regularly.

  4. Gradually pour in the stock and bring to boil, and bubble away for 3 mins.

  5. Add the kale and cook for 5 mins before adding the mustard, half the tarragon and the juice of half a lemon.

  6. Once all combined, transfer to a pie dish. Heat the oven to 180°C.

  7. By now your potatoes should be ready to mash, remove from heat, drain and mash with some seasoning.

  8. Spoon the mash over the pie and bake for 20 minutes. Serve when the topping is nice and golden!
