Naked Burrito Bowl

10 Minute Naked Burrito Bowl. Mexican bowl with tons of flavours, so fresh and colourful!

Serves: 2 (easily doubled) Time: 10 minutes


Ingredients

  • 1 pack of Mexican microwave rice, Merchant Gourmet Mexican Grains is lovely!

  • 300g steak mince, as lowest fat % you can find

  • 30g cheddar cheese, grated

  • 2 little gem lettuce, shredded

  • 1 large carrot, grated

  • 2 large tomatoes, diced

  • 1 lime

  • handful of coriander, chopped

  • 2 tablespoons Peri Peri Mayo, or mix chipotle paste with mayonnaise

  • 2 teaspoons ground cumin

Method

  1. Heat a large pan on medium-high heat, throw in the mince and cook for 7 minutes. Once it's done, whack in the cumin, mix well and cook for a further 2 mins.

  2. Meanwhile, shred your lettuce and prepare all your salad. Heat your rice per packet instructions.

  3. Once everything is done, load up your bowl with the Mexican rice, lettuce, tomatoes and carrot.

  4. Top with the mince, sprinkle over the cheddar and then drizzle over 1 tablespoon of Peri Peri mayo per person. Squeeze over the lime juice and top with coriander. Easy!
