Olives & Tomato One Pot Fish

25 Minute Olives & Tomato One Pot Fish. Super fresh and healthy fish dish.

Serves: 4 Time: 25 minutes


Ingredients

  • 175g black olives in oil, pitted

  • 1 large onion, chopped

  • 400g can chopped tomato

  • 4 x 175g white fish fillets, boneless

To serve

  • Parsley, chopped

  • Lemon wedges

  • Extra steamed veggies

Method

  1. Heat the oven to 180°C. Then throw 1 tablespoon of the oil (from the olives) into an oven-proof pan. Whack in the onion and stir occasionally for 2 minutes to soften.

  2. Next, throw in the tomatoes and some salt and pepper. Bring to a boil, then throw in the olives.

  3. Place the fish, skin side down, onto the sauce and drizzle over a splash more oil from the olive jar.

  4. Bake, uncovered, for 15 minutes until the fish is cooked.

  5. Sprinkle with chopped parsley and serve with lemon wedges and any extra steamed veggies of your choice.
