Open Tex Mex Wrap

8 Minute Open Tex Mex Wrap. I do love a healthy wrap - perfect for lunch at home with lots of flavours. New fave for sure!

Serves: 2 Time: 8 minutes



  • 2 chicken breasts

  • 2 teaspoon chipotle or harissa paste (harissa will be spicier)

  • 1 lime, juiced

  • 1 avocado

  • 4 cherry tomatoes, chopped

  • 8 pickled jalapeño slices, chopped (optional)

  • 2 gherkins, sliced (optional)

  • 1 small garlic clove, finely grated

  • 1 small wheat free wrap per person

  • Little gem lettuce, shredded


  1. Put the chicken breast between two pieces of cling film and bash with a rolling pin or pan to about 1cm thick. Mix the chipotle paste with half the lime juice and spread over the chicken.

  2. Heat a griddle pan over a high heat. Once hot, cook the chicken for 3 mins each side until cooked through. Heat the wrap in the same pan for for a few seconds on each side - until warm but not burnt.

  3. Meanwhile, mash the avocado with the remaining lime juice. Stir in the cherry tomatoes, jalapeño and garlic, and season with a little salt. Spread over the base of the wrap, then add the chicken and shredded lettuce.

  4. Enjoy with extra salad if you like, or your fave greens from the unlimited foods list.
