25 Minute Paneer Tikka Fakeaway. No need to order a takeaway when you can have a vegetarian Indian dish on the table in 25 mins.

Serves: 4 Time: 25 minutes
Fresh Ingredients
250g Baby Plum Tomatoes, halved
200g Paneer Cheese, cubed
2 Lemons, 1.5 juiced the rest cut into wedges
2 Tablespoons of Natural Yoghurt
2 Shallots, diced
Cupboard Ingredients
2 Garlic Cloves, minced
1 Thumb Sized Piece Fresh Ginger, grated
2 Teaspoons Paprika
2 Teaspoons Ground Turmeric
2 Teaspoons Garam Masala
4 Mini Naans, or serve with rice
2 Tablespoons Veg Oil
1 Teaspoon Olive Oil
Optional Ingredients
40g Mango Chutney
1 Bunch Mint, leaves chopped
Method
Heat the oven to 200°C. Add the ginger, garlic, paprika, turmeric, and garam masala to a medium-sized bowl. Next throw in 2 dollops of the yoghurt, the lemon juice, 1 tablespoon of veg oil, and the paneer. Mix well.
In another bowl, add the tomatoes, shallots and mint. Squeeze In the remaining juice, olive oil and season. Heat a large non-stick pan with the remaining veg oil. When hot add the paneer along with the marinade and cook until crisp.
Meanwhile, pop the naans in the oven to heat. Serve the paneer on the warm naan with the tomato and mint salad on top and lemon wedges. Spoon the chutney on the side for some extra yum!
