30 Minute Patatas Bravas. Potato lovers hear me out! Oh those sweet crispy tatties, get in me belly.
Serves: 4 Time: 30 minutes
Ingredients
1 Lemon
80g Roasted Peppers, drained
1.2kg Potatoes, peeled and cut
1 Handful Fresh Parsley, chopped
Green Salad Of Your Choice
3 Tablespoons Olive Oil
1 Onion, diced
3 Garlic Cloves, sliced
2 Teaspoons Smoked Paprika
1⁄4 Teaspoon Cayenne Pepper
350g Tomato Passata
1 Tablespoons Vegetable Oil, for frying
Method
Heat the oven 220°C. Put the potatoes in a pan of cold water with some salt and bring to the boil, leave to simmer until tender. Once ready, drain well, and leave to air dry.
Meanwhile, heat the oil in a large non-stick frying pan and saute the onion, 1 garlic clove and peppers for around 8 mins. Mix in the paprika, and cayenne with a squeeze of lemon juice. Mix until fragrant, then add the passata. Simmer for around 20 mins until the sauce thickens.
Once the potatoes are dried, toss them in the veg oil and roast for 20 mins until nice and golden with the remaining 2 garlic cloves.
Once the sauce is ready, set aside to cool slightly, then with either a stick blender or food processor, blend until smooth.
Serve your roasted crispy potatoes with the sauce on top and sprinkle with parsley to serve.
