Pesto & Aubergine Pizza

15 Minute Pesto & Aubergine Pizza. So simple to make, and super speedy.

Serves: 2 Time: 15 minutes



  • 2 flatbread wraps

  • 1 small aubergine, thinly sliced lengthways

  • 1/2 medium red onion, thickly sliced

  • 2 tablespoons olive oil

  • 2 tablespoons fresh pesto

  • 50g feta cheese

  • chilli flakes (optional)

  • rocket leaves, to serve


  1. Heat oven to 200C. Toss the vegetables in the oil and season well. Grill on a griddle pan, about 5 mins each side, until black lines appear and the aubergines are soft. Remove and set aside.

  2. Place the flatbreads on 2 large baking trays and spread evenly with the pesto. Add the aubergine, onion and feta cheese, broken into chunks, plus chilli flakes if you like it spicy.

  3. Bake for 15 minutes until the flatbread is golden and crisp and cheese has melted. Season with salt and pepper and serve topped with rocket. Yum!
