15 Minute Plant Cartel Burrito. Mexican burrito oh yes please. Perfect for lunch at home or on the go - with lots of flavours. New fave for sure!

Serves: 4 Time: 15 minutes
Ingredients
Black Beans and Corn Mix
1/2 Medium Onion, diced
1 Tablespoon Olive Oil
1/4 Teaspoon Dried Chili Flakes
1/2 Teaspoon Ground Cumin
200g Can Black Beans (Drained)
200g Can Sweet Corn (Drained)
60ml Water
Salsa Mix
2 Large Tomatoes, diced
Handful of Coriander, chopped
1/2 Medium Onion, diced
1 Garlic Clove, minced
1/2 Lime, Juiced
1/2 Tablespoon Olive Oil
Pinch of Salt and Pepper
Guacamole Mix
1 Avocado, chopped
1/2 Lime, juiced
Pinch of Salt and Pepper
Serve With
1 Pack of Microwavable Sundried or Mexican Tomato Rice (if available)
4 Large Tortillas
Shredded Lettuce
Method
BLACKBEAN AND CORN MIX: Heat the oil in a pan, then throw in the onion, chilli, and cumin, then saute until onions are translucent. Add the black beans and sweetcorn with the water and stir fry until the majority of the water has gone. Season to taste and set aside.
SALSA MIX: Whack all the ingredients in a bowl and toss to combine.
GUACAMOLE MIX: Mash everything together and season.
RICE: Heat per pack instructions.
TORTILLAS: Heat for a few seconds in the microwave to warm through.
TIME TO PREPARE: One layer at a time, get building with all of your yummy mixtures. Once built you can wrap them in foil and save them in the fridge.
