Pork Kebab & Greek Salad

10 Minute Pork Kebab & Greek Salad. I designed this dish based on my fave Greek restaurant. So easy and quick to make!


Serves: 2 Time: 10 minutes

 

Ingredients

  • 250g Pork Mince

  • 2 Garlic Cloves, minced

  • 1 Tsp Dried Oregano

  • 1 Tsp Smoked Paprika

  • 1/2 Red Onion, thinly sliced

  • 1/2 Cucumber, sliced

  • 2 Large Tomatoes, diced

  • 30g Feta Cheese, crumbled

  • 1 Pitta Bread per person

Greek Dressing Ingredients

  • 1 Garlic Cloved, minced

  • 1 Tbsp Olive Oil

  • 1 Tbsp Red Wine Vinegar

  • 1/4 Tsp Dried Oregano

  • 1/4 Tsp Dijon Mustard

  • Salt & Pepper


Method

  1. Combine the mince, garlic, oregano and paprika in a large bowl. Season and mix well using your hands. Divide into 8 small balls, then pop on a plate and set aside.

  2. Next combine all the Greek dressing ingredients and mix well in a bowl. Slice and dice all your salad bits & feta and throw into this bowl with the dressing and mix well. This is your greek salad.

  3. Heat 1 tablespoon olive oil in a large pan, once hot place each ball into the pan and squish down a little with a spatula so that they form a sausage shape. Cook on a low heat for approx 4-5 minutes each side. Be careful not to burn, turn the heat right down if they do. Do check the meat is no longer pink before serving.

  4. Meanwhile heat your pitta in a toaster to your liking and plate up with the greek salad and top with the pork kebabs once cooked. Easy peasy!
