Pork Meatball & Rice One Pot

30 Minute Pork Meatball & Rice One Pot. So easy and so many flavours yum!

Serves: 4 Time: 30 minutes



  • 6 sausages

  • 1 tablespoon olive oil

  • ½ onion, finely chopped

  • 2 garlic cloves, crushed

  • 2 teaspoon each ground cumin and coriander

  • 140g long grain rice (dry weight)

  • 850ml vegetable stock

  • 400g can chopped tomato

  • ½ bunch coriander, leaves picked

  • spring onions, sliced for garnish


  1. Open the sausage skins and squeeze out the meat. With your hands, form into small meatballs. Heat the oil in a large non-stick pan, then brown the meatballs on all sides until cooked, then set aside for later.

  2. Add the onion and garlic to the pan. Soften for 5 mins until translucent, then throw in the spices and rice, cook for another min or 2.

  3. Whack in the stock and tomatoes, bring to a simmer and scrape up any sausage bits from the bottom of the pan.

  4. Simmer for 10 mins until the rice is just cooked, then stir in the meatballs with some seasoning if you like.

  5. Pour into bowls, sprinkle over the coriander and spring onions - enjoy with extra veggies if you like!
